Updated July 2026.
Rum cake is not a TTB class. US rum is a US type.147 at 40% or more. Baking drives off some ethanol; leftover alcohol depends on the recipe, soak, and bake, no invented percent. A measured 1.5-ounce pour of 40% rum is one NIAAA drink. A slice is not a standard drink unless you measured the rum.
